The common wheat is stone-milled and undergoes a gradual sifting process to obtain its degree of fineness. Type 2 is characterized by a higher bran content than refined flours that allows it to keep all the beneficial elements related to fibres and dietary elements and guarantees a higher digestibility than the products from refined flours.
Type 2 common wheat is perfect for naturally leavened wholemeal products such as bread or pizza, but also for bakery products like biscuits, tarts or bundt cakes.
