Agostinello maize variety is typical of Molise: this cereal is naturally grown by farmers of Molise, hand-harvested and sun-dried. The flour obtained after milling is whole and naturally gluten-free with a high protein content. The lipid component is characterized by unsaturated fatty acids (linoleic and oleic) which keep Vitamin E and antioxidants.
Agostinello maize flour is ideal for cornmeal mushes, bread, pasta, sweets and breading. Blended with bakery flours it can be used for bread production.
